Blue chamomile (Matricaria recutita) gets its name from chamazulene, the dark blue compound that develops during steam distillation of the dried flower heads. The resulting essential oil is deeply pigmented and carries a herbaceous, slightly bitter, apple-tinged scent that sits in the aromatic-green family. Perfumers use it for chypres and modern aromatics where a soft herbal note is needed without the medicinal sharpness of full chamomile distillate.
