Green apple smells sharp, tart and watery, like a bitten Granny Smith with a leafy green lift. It reads juvenile and fresh, one of the most popular fruit notes in mainstream perfumery.

There is no green apple essential oil. The note is built entirely from synthetics. The most important molecule is hexenyl acetate, which gives the characteristic crunchy-green effect, supported by ethyl butyrate for juice, damascenone for a rosy fruity heart and various aldehydes for shimmer. Specific captives at Givaudan, Firmenich and IFF allow perfumers to move between unripe green, dewy crisp and freshly cut orchard apple.

Green apple is a top note with moderate persistence. Perfumers use it to electrify citrus openings, to lift rose and iris (DKNY Be Delicious, Nina Ricci L'Air du Temps modern flankers), and to brighten aquatic and musk bases. It pairs beautifully with cucumber, lily of the valley, white musk and green tea.

Green apple performs best in spring, summer and warm daywear, and suits youthful, transparent signatures.
