No commercial apple essential oil exists in fine fragrance. The note is built entirely from aroma molecules: hexenyl acetate gives fresh green apple, damascones lend the softer red and rose-tinged facet, and various aldehydes provide the watery juice effect. Specific captives and reconstructions allow perfumers to move anywhere between unripe, fresh, stewed and cider-like.

Apple is a top note and a diplomatic one. Perfumers use green apple to electrify citrus openings and aquatic compositions, red apple to warm gourmand and oriental bases, and tart apple to support the modern fruity-chypre family made famous by DKNY Be Delicious.

Apple performs year-round. Green interpretations suit spring and summer, while red and baked apple lean into autumn and winter gourmands.
