Pimento, also called allspice, is the dried berry of the Pimenta dioica tree native to the Caribbean and Central America. Its essential oil contains eugenol, the same molecule that gives clove its warmth, but in a softer, sweeter form that bridges between black pepper and cinnamon. Perfumers use pimento sparingly in the top-to-heart transition of a composition because the warmth carries through the entire wear cycle.
