Coffee in perfume smells roasted, bitter and slightly caramelised, like freshly ground beans with a faint chocolate heart and a smoky dry-down. It is one of the defining gourmand notes of modern niche fragrance.

The raw material comes from roasted beans of Coffea arabica and Coffea canephora (robusta), produced by solvent extraction or CO2 extraction. The aroma is a complex mix of hundreds of volatile molecules, including 2-furfurylthiol (the molecule responsible for the classic freshly-brewed smell). Natural coffee absolute is dark, viscous and expensive; perfumers typically support it with caramel, chocolate, vanilla and tobacco accords for a fuller cafe effect.

Coffee is a heart note with dry-down persistence. Perfumers use it as the star of coffee-gourmand compositions (Thierry Mugler A*Men Pure Coffee, Montale Intense Cafe), to warm amber and tobacco bases, and to sharpen rose and oud. It pairs beautifully with vanilla, cardamom, chocolate, rose and leather.

Coffee performs best in autumn, winter and evening wear, and suits rich, bold signatures.
