Apricot in perfumery comes from gamma-undecalactone (also known as aldehyde C-14, the molecule that gives the fruit its peachy-creamy smell) supported by gamma-octalactone, ionones, and faint cherry-kernel accents. Although gamma-undecalactone was discovered in the 1900s, the apricot accord built around it powered some of perfumery's most-cited feminine releases including Guerlain Mitsouko (1919), which Jacques Guerlain built around the molecule and which still defines the fruity-chypre category.
